You will need

100ml double cream

100g dark chocolate

Optional flavourings, e.g. rum, irish cream, coffee

Optional toppings, e.g. icing sugar, cocoa powder, chopped nuts, melted chocolate

Method

  1. Heat the double cream to just below boiling.
  2. Add the dark chocolate and mix until smooth. At this point, you could add any flavourings of your choice. 
  3. Transfer the mixture to a bowl and put in the fridge until firm.
  4. Once chilled, roll into balls using a teaspoon of mixture for each. 
  5. Roll the truffles in the topping of your choice: icing sugar, cocoa powder, chopped nuts etc., or dip them in melted chocolate.
  6. Once cooled again, place them in a tin or gift box. They would make great presents – perhaps for a teacher or neighbour?
